Southwestern Style Quinoa
I'm not a pro at writing out recipe's so please give me grace LOL! Here are the basic instructions that I followed when creating this yummy dish.
-Wash your quinoa. Do NOT skip this step or your quinoa will taste like sand!
-Boil your quinoa in beef broth according to the package directions.
-In a frying pan, fry 1 large package of ground turkey until well done.
- To the ground turkey add onions, garlic, yellow, green and red peppers. Cook until the onions are translucent. I use a hefty amount of these ingredients because I love the aroma and flavor it gives the meat. I don't know exactly how much I use but I would guess that It's about a cup of each. (told ya I use a lot)
-While your veggies are cooking add the following seasoning to the meat mixture:
1-2 Sazon tomato packets
2 tsp Tony Sacherie seasoning
1-2 tsp Sea Salt
-Once the veggies are cooked and the meat mixture is seasoned add the following
(Please drain each item! DO NOT put the water in the cans into your meat mixture)
1 - 15 oz drained cans of:
1 - Rotel
-Let the meat mixture simmer for 10-15 min.
Once everything is complete Layer the ground turkey mixture with quinoa and serve it up with your favorite toppings: Cheese, green onions, sour cream & guacamole are my favorites.
